Bulk Salsa

I love relatives with huge gardens…you always get something yummy when they can’t eat it all. πŸ™‚

My grandfather-in-law has a huge and beautiful garden…and I mean HUGE. And every year it’s so delicious. Well this week we got a grocery bag full for juicy, ripe, heavenly tomatoes! Well I already had 6 in my fridge so I used about 15 tomoates to make a homemade salsa. I winged the recipe becuase I literally made it in bulk. πŸ™‚ I had so many I have 7 tomatoes from the bag away and still have the 6 in the fridge. There were a lot.

Here is what I used:
15 tomatoes
3 large green bell peppers
2 large red bell peppers
1 head of cilantro
1 large white onion
1 cup tomato juice (so good)
salt and pepper to taste

I had 3 1/2 quarts of salsa. I divided it up and froze most of it. I am going to need a lot of chips. And I’m not sharing. It tastes so good, and above all else…chips and salsa is my #1 comfort food. MmMmm
